Hey y’all! Happy Monday! Well, I finally got around to putting together a recap of our latest vacation to Mexico! We spent 6 days at the gorgeous new resort, Unico, that just opened up in March of this year. The hotel got rave reviews from our travel agent, Jennifer, and since she’s never steered us wrong in the past, we booked it. And man, were we glad we did. This was hands down one of the nicest resorts we’ve ever stayed at. Here is our Riviera Maya 2017 recap!

Our flight from Houston to Cancun left bright and early which meant we’d have an almost full day at the resort as soon as we got there. Score! And can I just say that one great thing about living in Houston is there are so many more direct flights compared to flying out of Oklahoma City. Less travel time equals more relaxing time!
After less than a 2 hour flight and a 1 hour car ride, we arrived at the resort just after 11 a.m. As soon as we walked in I was in awe at how gorgeous the resort was. The attention to detail in every nook and cranny was amazing. The check-in process was smooth and super quick as well.
While we were waiting to meet our personal Anfitrión (host), we were given the hotels signature drink to sip on, the Jade. It was a mix of cucumber, lemon and sparkling water and it was amazing. So amazing that I made frequent trips to the lobby bar to pick up the refreshing concoction during our stay.
Within 15 minutes of arriving at the resort we were being escorted to our room, an Alcoba Ocean View. I was surprised that we were immediately able to have access to our room since we’d arrived so early. On other vacations we’d typically pack bathing suits and a change of clothes so we could enjoy the pool until our room was ready. On our way to the room our host took us on a short tour of the property and showed us where we could find all of the amenities and restaurants. After we made it to the room, our luggage arrived and we quickly changed into our swim suits and made our way down to the main pool to snag some chairs.
Within minutes of sitting down, we were being waited on by the hotel staff. They made sure that our towels were properly placed on the chairs and made us neck rests as well. They also made sure we had a cold drink right away. Model for me and Jameson for the hubby.
We spent the remainder of the day and evening hanging out by the pool and meeting some other couples. We ended up getting room service delivered to our room that night for dinner. If you ever decide to stay at Unico, definitely download their app! It makes it incredibly easy to order food, schedule housekeeping and spa treatments and even put a ‘do not disturb’ flag on your room.
The next morning we ordered room service for breakfast (I’m telling you, their app is amazing!) before heading to the spa for some pampering. Another amazing thing about Unico is they have unlimited spa treatments included! For a 20% service fee, they take your stay to the next level with unlimited golf, spa treatments, local tours, and beauty salon & barbershop services. Needless to say, I got a massage almost every single day we were there aside from the first day when I got the Agave For One. It was hands down the best spa treatment I’ve ever received. I actually fell asleep during it and woke myself up snoring (no joke). It was incredible!
After we made it back from the spa we changed into our swim suits and headed down to the pool. On the way they had a mini food stand set up and were serving these delicious waffle cone treats. I couldn’t pass it up and decided to get one with nutella on the inside. It was so incredibly delicious!
We spent another day relaxing pool side, sipping cocktails, eating delicious pizza and getting pampered. My drink of choice was a jade with some grey goose, so yummy!
After a day at the pool we headed upstairs to get changed for our dinner reservation at the Italian restaurant, Mi Carisa. Another thing that I really love about Unico is that the resort isn’t massive. Other resorts we’ve stayed at we would have to walk 15+ minutes to get from our room to the main part of the hotel. Sometimes we’d even have to take a golf cart. At Unico everything is a short walk away. A big plus in our book.
Dinner at the Italian restaurant was super delicious and the staff was so accommodating. After dinner we headed up to the main lobby to check out the live art show that was going on. We ordered drinks from Bar Balam and posted up on one of the large plush couches.
The mixology at Bar Balam was incredible. All of their drinks are a Mexican spin on classic cocktails. I tried quite of few of their creations and my favorite was definitely the Xkeban (the sinner).
It was a mix of chile infused vodka, strawberries, mint, basil, agave honey and lemon juice and topped with a dehydrated red chile. It had the perfect ratio of spicy to sweet. A total winner!
We spent about an hour watching the artist finish his painting. His canvas was split into four different pieces and jumbled up. We spent a majority of the time trying to guess what the finished product was going to look like. As soon as he was done, Schoen and I and another couple were called up to help assemble the final product.
The finished pieces was gorgeous and was displayed in the lobby for the duration of our stay! The fact that he was able to paint a majority of this pieces upside down was pretty impressive! After the live art show, we met up with some friends we had met and made our way to the Palmero lounge where we danced until nearly 2 am. It was such a fun night! The band playing was amazing and it was impossible not to dance!
The next morning we headed down to grab breakfast at Restaurant 20.87. Their breakfast buffet was amazing, and their omelets were so delicious! But one of my favorite things at Unico was the coffee. Their coffee was so delicious. We had a hot pot delivered to us almost every evening before heading out for dinner. So. Good. After breakfast we snagged some chairs by the pool and spent the day poolside, aside from breaking away for our respective spa appointments.
Another one of my favorite things about vacations is having lunch delivered to you by the pool. Their wood-fire pizza’s were bomb! My favorite was the margherita and Schoen was obsessed with the pepperoni. Their ceviche was to die for and their guacamole and salsa were super fresh!
We left the pool a little earlier than usual because the heat was super intense. We lounged in our room for a few hours before getting ready for our dinner reservation at the Japanese restaurant, Mura House. With cocktails on the mind, we headed down to Bar Balam about an hour before our reservation.
The Japanese restaurant may have been my favorite place to dine while we were there. We each started with a sushi roll and I was floored by how delicious it was. Schoen got a California roll (his go to) and I took our servers advice and tried their specialty roll. I can’t remember exactly what was it in, but it was so good! Schoen opted for a lobster dish for his entree and I decided on chicken teriyaki. Their fried rice definitely stole the show. It was drool worthy. And that says a lot coming from someone who spent a majority of their life living in Southeast Asia!
After dinner we strolled through the property to snap some pictures. The sunset was gorgeous and made the sky look like a water color. The hotel grounds are truly beautiful.
We called it a night somewhat early and headed back to our room. We both wanted to spend some time at the gym the next morning so we were fast asleep shortly before 10 that evening.
Another amazing thing about Unico is their fitness facility! I was floored by how great it was. They have a ton of equipment, lots of heavy weights, a a great variety of cardio equipment (even a StairMaster!). They also have variety of classes you can take inside the main gym including HIIT, Core, Cross Training and Pilates. In addition to their main gym, they even have a separate room to host spin classes. I opted to get in a quick shoulder workout and some cardio.
After the gym we immediately headed over to grab some breakfast at the buffet before they shut it down for the morning. After gobbling up some omelets and fruit we changed into our suits and hit the pool again. I spent a majority of my afternoon under the safety of an umbrella reading a book on my Kindle Oasis. The screen is amazing and you can see it perfectly even in direct sunlight!
After a few hours poolside, I headed back to the spa for another glorious 1 hour massage. The spa always had large canisters of infused water. My favorite mixture was the cucumber, mint and basil. It was so refreshing!
After the spa I headed back to the pool to meet up with Schoen and a few other couples we had met the previous day. The main pool had a few fun inflatable pool floats for the guests to use. I snagged the unicorn and sunned on it for quite a while! It was surprisingly comfortable!
Our dinner reservation was at the Mexican, Cueva Siete (Cave Seven) restaurant that evening. We’d heard from quite a few other guests that it was super delicious, and it was! Schoen got the Chicken Pipian and I opted for the Traditional Cochinita Pibil. We didn’t have any issue polishing off all of the food on our plates. It was amazing!
Our last evening was spent relaxing in bed reading, watching TV and snacking on churros that we had delivered to the room. It was the perfect ending to our Mexican getaway.
We hated to say goodbye to Unico, but we were ready to get back home to our house and puppy. Our last morning was spent soaking in this gorgeous view from the hotel lobby, sipping some of their amazing Mexican coffee before heading to the airport.
A last minute upgrade to first class was the icing on our vacation cake. We sipped on cocktails as we said ‘until next time’ Mexico!
As amazing as our vacation was, it sure was great to come home to this little chunk nugget.
