If you’ve been following me over on Instagram, you’ll notice that I’ve been obsessed with avocado toast lately. It has been one of my breakfast staples for the past couple of weeks. I’ll admit, I was a little late jumping on the avo-toast bandwagon. I was the kind of girl that thought avocados were only meant to be in guacamole. But now that I’ve tried it, I’m a total believer in the avocado toast movement. Today I’m sharing one of my favorite toast combinations: smashed avocado, hard boiled eggs, radish and bagel seasoning!
This combination may seem a little odd to some, but there is something about it that just makes it oh so right. I’ve tried it with over easy eggs as well, but some mornings I just don’t have the time (or patience) to get a skillet out and fry up some eggs. That being said, there are also occasions when I don’t have any hard boiled eggs made. I usually pick up a package or two of peeled and ready to eat eggs during my weekly grocery trip to Walmart so I have some on hand.
All you do is toast up a piece of your favorite bread (I love Ezekiel), chop it in half and slather each piece with some fresh avocado. I like to use a fork to get it nice and mashed up. Then I thinly slice up one hard boiled egg and place a few pieces on each slice. Throw on a few rounds of sliced radishes and top with bagel seasoning. If you can’t find prepared bagel seasoning, make your own! Mine had sesame seeds, sea salt flakes, dried minced garlic, dried minced onion, black sesame seeds, and poppy seeds.
Not only is this a delicious combination, but it’s packed with healthy fats and protein so you can feel good about eating it. And thanks to the prepared hard boiled eggs, it all comes together in a flash. Give it a try and let me know what you think!
- 1 slice Ezekiel bread
- 1 small avocado
- 1 radish thinly sliced
- 1 hard boiled egg thinly sliced
- Bagel seasoning
- Toast up your bread until brown and slice in half.
- Top each piece of toasted bread with smashed avocado.
- Add a few slices of hard boiled egg and radish on top of each piece.
- Sprinkle with bagel seasoning.
